A classic textbook is "Remote Sensing: The Quantitative Approach" by Swain and Davis. Chapter 3 is "Fundamentals of Pattern Recognition in Remote Sensing." Dated 1978, the book does not have lidar in it; the applications are aircraft scanner data, 12 spectral bands. Recent textbooks discuss pattern recognition and remote sensing as image classification.
